Ingredients

  • 4 bone-in skin-on chicken thighs about 900 g total; trim excess loose fat
  • 1 tablespoon neutral cooking oil 14 g
  • 1/2 teaspoon fine salt divided; adjust to broth and taste
  • 1/4 teaspoon ground black pepper
  • 2 cups low-sodium chicken broth 480 mL; plus a little more only if needed
  • 80 g raw hulled pumpkin seeds about 2/3 cup; reserve 1 tablespoon after toasting
  • 300 g tomatillos husked and rinsed, about 6 medium
  • 80 g white onion about 1/2 small onion, roughly chopped
  • 3 garlic cloves peeled, about 9 g
  • 1 jalapeño about 20 g; stem removed, seeds and ribs removed for milder heat
  • 1 cup loosely packed cilantro 15 g, leaves and tender stems
  • 2 romaine lettuce leaves 30 g, roughly torn
  • 1 tablespoon lime juice 15 mL; add only after tasting

Equipment

  • 1 Large lidded skillet
  • 1 Small dry skillet
  • 1 Saucepan
  • 1 Blender suitable for warm liquids
  • 1 Tongs
  • 1 Food thermometer

Instructions

  1. Pat chicken dry with paper towels; do not rinse it. Season with half the salt and the pepper. Heat oil in a large skillet over medium-high heat. Brown chicken skin-side down for 6–8 minutes, then turn and brown for 2 minutes. Lower heat if the pan smokes.
  2. Add 1 cup of the broth around the chicken, bring to a gentle simmer, cover and cook over medium-low heat for 25–35 minutes. Check the thickest part away from bone: it must reach at least 165°F (74°C). Thighs may become more tender around 175–180°F. Add a splash of broth if the pan gets dry.
  3. While the chicken cooks, toast pepitas in a dry skillet over medium-low heat for 3–5 minutes, stirring often, until fragrant and beginning to puff. Do not let them darken. Transfer to a plate and reserve 1 tablespoon for garnish.
  4. Put tomatillos, onion, garlic and jalapeño in a saucepan with water just to cover. Simmer 8–10 minutes, until tomatillos soften but do not disintegrate. Drain. Let cool until safe for your blender; never seal steaming-hot liquid in a blender.
  5. Blend the remaining toasted seeds with the remaining 1 cup broth, softened vegetables, cilantro, romaine and remaining salt until as smooth as your blender allows. Work in batches and follow the blender manufacturer's warm-liquid instructions.
  6. Transfer the fully cooked chicken to a clean plate. Pour the green sauce into the skillet with the cooking juices. Simmer gently, stirring frequently, for 8–10 minutes until spoonable; add broth a tablespoon at a time if thick. Return chicken and warm through for about 3 minutes, keeping it at least 165°F. Taste before adding the lime juice; use only as much as needed.
  7. Divide chicken and sauce among four plates. Scatter the reserved pepitas on top. Serve optional rice or tortillas separately.

Notes

Nutrition is an estimate per thigh with one quarter of all sauce. It assumes 600 g edible raw skin-on chicken from 900 g bone-in thighs, using Perdue's 250 kcal/112 g label, 80 g pepitas using NOW Foods' 170 kcal/31 g label, and standard vegetable and oil values. Includes all oil and sauce; bones, rice and tortillas are excluded. Discarding skin or rendered fat changes the result. Cost estimate: chicken US$6–8, pepitas about US$2, produce US$3–4, broth/oil US$1–2. Check broth for allergens. Refrigerate in shallow containers within 2 hours, or 1 hour above 90°F (32°C), and use within 3–4 days. Reheat to 165°F (74°C), adding broth to loosen.
