Ingredients

Brownie batter
  • 115 g unsalted butter cut into pieces
  • 180 g granulated sugar
  • 45 g unsweetened Dutch-process cocoa powder sift if lumpy
  • 2 large eggs about 100 g without shells
  • 1 teaspoon vanilla extract 5 ml
  • 1/4 teaspoon fine salt
  • 60 g all-purpose flour weighed rather than packed into a cup
  • 75 g dark chocolate chips small chips or chopped dark chocolate

Equipment

  • 8-inch (20 cm) square metal baking pan
  • Parchment paper
  • Microwave-safe mixing bowl
  • Whisk and flexible spatula
  • Kitchen scale
  • Wire rack
  • Toothpick or thin skewer

Instructions

  1. Heat a conventional oven to 350°F (175°C), with a rack in the center. Line an 8-inch (20 cm) square metal pan with parchment, leaving an overhang on two opposite sides. Do not substitute a larger pan without expecting a thinner slab and different baking time.
  2. Melt butter in a microwave-safe bowl in short bursts, stirring between them, until just melted and warm rather than sizzling. Whisk in sugar for about 1 minute, then cocoa until evenly combined. Let the mixture cool if it feels hot; it should be warm, not hot enough to cook the eggs.
  3. Whisk in eggs one at a time, then vanilla and salt, until the mixture is smooth and slightly glossy. Add flour and fold with a spatula only until no dry streaks remain, scraping the bottom of the bowl. Fold in dark chocolate chips. Do not eat or taste the raw batter.
  4. Spread the batter evenly in the prepared pan. Bake about 25–30 minutes, checking toward the end; ovens and pans vary, so allow longer if necessary. The edges and center should be set, and a toothpick inserted in the center should show moist crumbs but no liquid raw batter. If the tester hits a chocolate chip, check a nearby spot. Do not use a shiny top alone as proof of doneness.
  5. Set the pan on a wire rack and cool completely, at least 90 minutes or longer if still warm. Lift out with the parchment sling. Cut into a 4 × 4 grid for 16 small squares, wiping the knife between cuts. Optional ice cream, nuts or frosting are excluded from the estimates.
  6. Keep cooled plain brownies airtight in a cool room for up to 3 days, or wrap individual squares and freeze for up to 1 month for quality. Thaw wrapped portions before serving. Add perishable toppings only when serving.

Notes

Contains wheat, eggs and milk; check chocolate for additional allergens. Use unsweetened cocoa, not drinking-chocolate mix. There is no baking powder or baking soda in this formulation. This recipe is designed for a set center with moist crumbs, not a raw batter middle; bake longer when needed. Cooking/cooling times are planning estimates.
Estimated nutrition per one of 16 small squares, with all chips included, using representative USDA/label values. Energy basis: butter 115 g about 825 kcal; sugar 180 g about 697; eggs about 144; flour 60 g about 218; cocoa 45 g about 103; chips 75 g about 375; vanilla about 12. Total about 2,374 / 16 = 148 kcal. Brands and portion sizes vary. Extra toppings excluded.
Portioned US retail cost assumptions, not a live quote: butter $1.10, sugar $0.18, eggs $0.66, flour $0.08, cocoa $0.75, chocolate $1.00, vanilla $0.15, salt $0.02 = $4.04 total / 16 = about $0.25. Oven energy excluded; local prices vary.
Instructional video by John Kanell / Preppy Kitchen, The BEST Brownie Recipe, originally published May 28, 2026, demonstrates melted-butter cocoa batter with chocolate chips and oven baking. His ingredient quantities and longer baking-time options differ from this smaller formulation. Follow this card's 8-inch pan, measurements and fully set-center cues; do not copy a time or a raw-looking center from a different batter.
