Ingredients
Dessert salad
- 1 20-ounce can crushed pineapple in juice 567 g, undrained
- 1 3.4-ounce package instant pistachio pudding mix 96 g; dry, not prepared and not cook-and-serve
- 1 8-ounce container frozen whipped topping 227 g, thawed according to package directions
- 1 cup mini marshmallows 50 g
- 1/3 cup chopped pecans 35 g; reserve a spoonful for topping if desired
Equipment
- 1 Large mixing bowl
- 1 Broad spatula
- 1 Covered serving bowl
Instructions
- Empty the crushed pineapple and all of its juice into a large bowl. Add the dry instant pistachio pudding mix and stir until the powder is evenly moistened and no dry pockets remain. Do not prepare the pudding with milk.
- Fold in the mini marshmallows and most of the pecans, reserving a little of the measured nuts if desired. Fold in the thawed whipped topping with a broad spatula until the color is even, without beating out all the air.
- Cover and refrigerate for at least 2 hours until cold and slightly thicker. Fold gently once if needed before portioning. Divide into eight small servings and finish with the reserved pecans.
- Keep the remaining dessert covered and refrigerated; do not leave the main bowl at room temperature through a long meal. Use within 3 days or earlier package guidance. Extra cherries, coconut, or nuts are not included in this recipe's estimate.
