Ingredients

Corn filling and wrappers
  • 1000 g fresh sweet corn kernels About 8–10 large ears; weigh kernels after cutting
  • 60 g unsalted butter Softened
  • 60 g fine yellow cornmeal Not coarse polenta
  • 20 g granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 16 wide fresh corn husks Plus extras for overlapping and lining the steamer; remove silk and rinse

Equipment

  • 1 Food processor
  • 1 Large steamer pot With rack and close-fitting lid
  • 1 Kitchen scale
  • 1 Tongs

Instructions

  1. Remove and reserve broad fresh husks, rinse them, remove silk, and keep them damp and flexible. Cut the kernels from the cobs and weigh 1000 g. Set up a steamer with water below the rack so it will not touch the packets.
  2. Process the corn in batches until finely ground and moist, stopping before it becomes a thin liquid. Beat the soft butter briefly, then mix in the corn, cornmeal, sugar, baking powder, and salt. Let stand for 15 minutes. The mixture should be thick and spoonable, holding a soft mound. If it runs freely, do not wrap it yet; let it stand a little longer. Corn moisture varies.
  3. Divide the filling into 16 portions, about 70 g each. Place a portion near the wide end of a husk, leaving space at the edges. Fold the sides around it and fold the pointed end upward, leaving the top loose for expansion. Overlap two husks if one is narrow; use a strip of husk to secure if needed.
  4. Line the rack with spare husks. Arrange the packets upright with open ends upward, supported close enough to stand but not tightly compressed. Bring the steamer water to a simmer, cover, and steam gently for about 50–70 minutes. Check water safely and replenish with boiling water below the rack as necessary; never let the pot boil dry.
  5. Open a test packet carefully. The center should be set and tender, without liquid batter, and release from the husk after a brief rest. Steam longer if needed. Turn off the heat and rest the packets covered for 10 minutes before removing with tongs. Peel off and discard husks before eating.

Notes

Estimates: Approximately per one-sixteenth of the filling: 1000 g raw sweet corn, 60 g butter, 60 g fine cornmeal, and 20 g sugar yield about 1590 kcal for the batch using standard ingredient values. Husks and steamer water are not eaten; toppings are excluded. Corn prices and edible yield vary. Budget basis: ten ears at $0.33 each ($3.30), butter portion $0.53, cornmeal $0.22, sugar and raising agent about $0.10; about $4.15 rounded to $4.50. This American sweet-corn adaptation uses cornmeal for structure; it is not a universal regional formula. Refrigerate within 2 hours, use within 3–4 days, and reheat to 165°F (74°C). Contains milk.
Video: Armando En Tu Cocina; YouTube original publication date 2016-08-04. The Spanish-language video demonstrates fresh-corn tamales wrapped in husks and steamed. His larger batch has a different butter, sugar, and raising-agent balance. This smaller sweet-corn adaptation adds fine cornmeal for structure and uses the measured quantities below; do not copy the video's amounts into this batch.
