Ingredients
Rocky road
- 340 g semisweet chocolate 12 oz; chips or chopped bar
- 14 g unsalted butter 1 tablespoon
- 135 g miniature marshmallows about 3 cups; weigh for consistency
- 100 g roasted unsalted almonds about ¾ cup; roughly chopped
Equipment
- 1 8-inch square pan 20 cm
- Parchment paper
- 1 Microwave-safe bowl completely dry
- 1 Flexible spatula
- 1 Sharp knife
Instructions
Melt, fold, and set
- Line an 8-inch square pan with parchment, leaving overhang on two sides. Roughly chop the almonds and set them aside with the marshmallows. Ensure the mixing bowl and spatula are completely dry.
- Place the chocolate and butter in a microwave-safe bowl. Heat at half power in 20–30-second bursts, stirring thoroughly each time, until nearly melted. Stir until the last pieces dissolve; do not keep heating simply because softened chips still hold their shape. Allow up to 5 minutes, depending on your microwave.
- Let the chocolate stand until warm rather than hot, stirring occasionally. Fold in the marshmallows and almonds until coated. If the chocolate is hot enough to melt the marshmallows, pause longer before combining.
- Scrape into the lined pan and spread evenly, pressing lightly into the corners without crushing the marshmallows. Refrigerate for about 2 hours, until the center is firm. A warm room or deeper pan may need longer.
- Lift onto a cutting board using the parchment. Let stand briefly if too hard to cut, then slice into 4 strips and cut each into 5 pieces, making 20 squares. Store covered in the refrigerator for up to 1 week for best quality. Keep cool during transport.

Notes
Calories are estimated per 1 of 20 equal squares. The batch calculation uses approximately 1,700 calories from chocolate (70 calories/14 g on the Toll House semisweet label), 450 from miniature marshmallows (100/30 g on the Jet-Puffed label), 571 from almonds (160/28 g on the Blue Diamond whole-almond label, used as an approximation for unsalted roasted almonds), and 100 from butter (Land O'Lakes, 14 g): about 2,821 calories total. Brands, roasting, and uneven cutting change the result. Cost is an ingredient-use estimate rather than a current retail quote.
Contains almonds and milk; chocolate may contain soy. Standard marshmallows contain gelatin, so do not describe this version as vegetarian. Keep all equipment dry. This is a refrigerated confection, not tempered chocolate intended for warm-room storage.
