Ingredients

Mushrooms and rice
  • 450 g cremini mushrooms cleaned and sliced
  • 2 tablespoons olive oil 28 g, divided
  • 1 small yellow onion 120 g, finely chopped
  • 2 garlic cloves 6 g, minced
  • 320 g Arborio rice not rinsed
  • 120 ml dry white wine or the same volume of additional broth
  • 1200 ml low-sodium vegetable broth kept warm; extra hot water if needed
  • 1 teaspoon fresh thyme leaves
  • 20 g unsalted butter
  • 60 g Parmesan cheese finely grated; choose vegetarian hard cheese if needed
  • 1/4 teaspoon freshly ground black pepper
  • salt only if needed, to taste

Equipment

  • Wide heavy sauté pan about 12 inches, 3–4 quarts
  • Small saucepan for broth
  • Ladle
  • Wooden spoon
  • Knife and cutting board

Instructions

Cook and finish
  1. Warm the broth in a small saucepan over low heat. In a wide sauté pan, heat 1 tablespoon of the oil over medium-high heat. Brown the sliced mushrooms in two batches, stirring occasionally, until their released moisture evaporates and edges turn golden, about 6–8 minutes per batch. Transfer to a bowl.
  2. Reduce the heat to medium. Add the remaining tablespoon of oil and the onion to the same pan. Cook for about 5 minutes until softened. Stir in the garlic for 30 seconds, then add the rice and stir for 2 minutes until the grains are lightly coated and their edges begin to look translucent.
  3. Pour in the wine and stir until mostly absorbed, about 1–2 minutes. Add a ladle of warm broth and maintain a steady simmer. Stir often, adding another ladle when the previous liquid is mostly absorbed. Continue for about 18–24 minutes, until the rice is tender with a slight bite and no chalky center. Use more or less broth according to texture.
  4. Stir the browned mushrooms and thyme into the rice during the final 3–4 minutes, adding broth to keep the mixture loose.
  5. Take the pan off the heat. Stir in the butter, Parmesan and black pepper. Add a little warm broth or hot water if needed so the risotto flows softly when the pan is tilted. Taste before adding salt. Divide among four warm shallow bowls and serve promptly.

Notes

Nutrition is estimated per one-quarter of the recipe using representative raw Arborio rice, cremini mushroom, onion, garlic, olive oil, butter and Parmesan values, plus typical broth and wine values. The full measured wine and broth are counted; actual cooking losses, retained liquid and brands vary. Optional salt and serving sides are excluded. Contains milk.
Video credit: Gennaro Contaldo on Jamie Oliver's channel, How To Make Perfect Risotto 4 ways. The video demonstrates the gradual-broth method and mushroom variation. This card separately browns fresh cremini mushrooms, omits the video's celery and dried mushrooms, and uses its own rice, fat, cheese and broth amounts. Follow this card's quantities.
Refrigerate leftovers promptly in shallow containers; use within 3–4 days. Reheat to 165°F (74°C), loosening with a little liquid.
