Ingredients
Squares
- 160 g crisped rice cereal about 6 US cups; weigh for consistency
- 56 g unsalted butter 4 tablespoons, divided: 1 teaspoon for pan and tool
- 340 g mini marshmallows 12 ounces
- 1 teaspoon vanilla extract
- 1/8 teaspoon fine salt
Equipment
- 1 9-inch square baking pan 23 cm
- 1 Large heavy saucepan
- 1 Heatproof spatula
- 1 Kitchen scale
- 1 Parchment paper
- 1 Sharp knife
Instructions
- Line a 9-inch (23 cm) square pan with parchment, leaving overhang. Reserve 1 teaspoon of the measured butter to lightly grease the parchment and spatula. Measure all remaining ingredients before heating.
- Melt the remaining butter in a large heavy saucepan over low heat. Add the marshmallows and stir gently for 4–6 minutes until smooth. Do not boil or brown the mixture.
- Take the pan off the heat. Stir in vanilla and salt, then fold in the cereal until evenly coated, working promptly without crushing the grains.
- Scrape into the prepared pan. Use the greased spatula or parchment to spread into the corners and lightly level the surface. Do not compress firmly.
- Cool uncovered at room temperature for about 45 minutes, until set enough to cut. Lift out by the parchment. Cut into 16 squares with a sharp knife. Store airtight once fully cool.

Notes
Fresh marshmallows melt most evenly. Use low heat and avoid firmly compacting the mixture. Contains milk; ordinary crisped rice cereal may contain barley malt and is not automatically gluten-free. Gelatin marshmallows are not vegetarian. Store airtight at room temperature for up to 2 days, or freeze separated layers up to 6 weeks. Nutrition is estimated per 1 of 16 squares from cereal, marshmallow and butter manufacturer labels, including all measured butter; brands and optional accompaniments change values. Cost is an estimate for quantities used, not full packages. Instructional video: Stephanie Jaworski of Joy of Baking demonstrates the classic cereal, butter and marshmallow technique; this version uses more butter and marshmallows, weighed cereal and added salt, so follow the written quantities here.
