Ingredients

Batter
  • 100 g rolled oats
  • 200 g 2% cottage cheese
  • 2 large eggs
  • 30 g vanilla whey concentrate protein powder use weight; powders vary
  • 60 ml 2% milk plus small splashes only if needed
  • 1 teaspoon baking powder 4 g
  • 1 teaspoon vanilla extract 5 ml
  • 1 teaspoon neutral oil 5 g, for brushing the iron

Equipment

  • Waffle iron
  • Blender
  • Kitchen scale
  • Wire cooling rack
  • Food thermometer
  • Silicone brush

Instructions

Blend and cook
  1. Preheat the waffle iron according to its instructions. Put the oats, cottage cheese, eggs, whey concentrate, milk, baking powder and vanilla in a blender. Blend until smooth, scraping down the sides as needed.
  2. Let the batter rest for 5 minutes so the oats hydrate. It should pour in a thick ribbon. If it is too stiff to pour, blend in additional milk 1 tablespoon at a time; avoid making the batter thin.
  3. Brush the hot waffle plates lightly with some of the measured oil. Add the amount of batter recommended for your iron, leaving room for expansion. Close and cook until golden, released easily and set through, usually 4–6 minutes. Egg-containing dishes should reach 160°F (71°C) in the center; check with a food thermometer.
  4. Transfer the waffle to a wire rack. Repeat with the remaining batter, lightly greasing the plates as needed. Expect about four medium waffles, depending on the iron; divide the finished batch into two equal servings.
  5. Serve promptly with optional toppings, counted separately. Let leftovers cool briefly on the rack, then refrigerate promptly in a covered container. Reheat until thoroughly hot in a toaster or oven, watching closely to avoid burning.

Notes

Yield is approximately four medium waffles, depending on the iron; one nutrition serving is half the entire batch. Nutrition is estimated from representative oats, 2% cottage cheese, eggs, 2% milk and vanilla values plus a whey concentrate label assumption of 120 kcal and 24 g protein per 30 g. The full 5 g oil is counted. Extra milk and toppings are excluded. Brands, powder type and retained oil change the result. Contains milk and eggs.
Video credit: Dani Spies, Clean & Delicious, HIGH PROTEIN WAFFLES I Can't Stop Making! The creator demonstrates blending oats, cottage cheese, eggs and whey before waffle-iron cooking. This card uses its own weighed oat, cottage-cheese and whey amounts, more milk, a short batter rest and vanilla rather than cinnamon. Follow this card's quantities; different powders do not necessarily behave the same.
Refrigerate leftovers promptly, use within 3–4 days and reheat thoroughly to 165°F (74°C). Do not leave the milk-and-egg batter at room temperature for extended preparation.
