Ingredients

Soup
  • 1 tablespoon olive oil 15 ml
  • 1 lb 90% lean ground beef 454 g
  • 1 medium onion 150 g, diced
  • 200 g carrots 2–3, cut in 1/2-inch pieces
  • 100 g celery about 2 stalks, diced
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste 15 g
  • 1 28-oz can no-salt-added diced tomatoes 794 g, with juices
  • 4 cups low-sodium beef broth 960 ml
  • 450 g Yukon Gold potatoes about 1 lb, cut in 1/2-inch cubes
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1/4 teaspoon black pepper
  • 150 g frozen cut green beans
  • 100 g frozen peas
  • 1/2 teaspoon salt or less, to taste
  • 2 tablespoons chopped parsley optional garnish

Equipment

  • 1 Large heavy pot At least 5 quarts
  • 1 Instant-read thermometer

Instructions

  1. Heat the oil in a large heavy pot over medium-high heat. Add the beef and break it into small crumbles. Cook for about 6–8 minutes, stirring, until a thermometer inserted into a gathered mound of beef registers 160°F (71°C); color alone is not a safety check.
  2. Add the onion, carrots, and celery. Cook for about 5 minutes, stirring, until the onion starts to soften. Stir in the garlic and tomato paste for 30–60 seconds. Add a splash of broth if the paste begins to stick.
  3. Add the tomatoes and their juices, remaining broth, potatoes, Worcestershire sauce, thyme, oregano, bay leaf, and pepper. Bring to a simmer, then reduce the heat. Partly cover and simmer gently for about 15–20 minutes, until the potatoes and carrots are almost tender.
  4. Add the frozen green beans and simmer for 8–10 minutes. Add the peas for the final 3–5 minutes. Continue until all vegetables are tender and the soup is hot throughout; timing varies with the size of the pieces. Remove the bay leaf. Taste before adding salt, then garnish with parsley if desired.
  5. Stir before dividing into six portions. Refrigerate leftovers in shallow containers within two hours, use within 3–4 days, and reheat to 165°F (74°C). Add a little water or low-sodium broth when reheating if needed.

Notes

Estimates: Nutrition is approximately per one-sixth of the soup, based on 454 g 90% lean beef, 15 ml oil, the measured vegetables, broth, tomato paste, and Worcestershire sauce. It excludes bread and garnish. The estimated US$14 batch cost uses about $6.88 for beef, $2.80 for fresh vegetables and potatoes, $1.76 for tomatoes, $1.30 for broth, and $1.26 for frozen vegetables and pantry portions. Local prices and package brands vary.
Video: Brandie Skibinski of The Country Cook, “Hamburger Vegetable Soup,” published November 3, 2024. Her recipe uses a frozen mixed-vegetable blend, tomato sauce, Creole seasoning, and red wine vinegar. This version uses fresh carrots and celery, separate frozen beans and peas, tomato paste, and herbs, without the Creole seasoning or vinegar. Follow this card’s quantities and cooking order.
