Ingredients

Onion broth
  • 2 pounds yellow onions 900 g peeled weight, about 4 large; thinly sliced
  • 3 tablespoons unsalted butter 42 g
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1/2 cup dry white wine 120 ml; not cooking wine
  • 6 cups unsalted beef stock 1.44 liters
  • 4 fresh thyme sprigs
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon fine salt add gradually to taste
  • 1/4 teaspoon ground black pepper
Cheese toasts
  • 4 baguette slices about 1/2 inch thick, 120 g total; trim to fit inside bowls
  • 3 1/2 ounces Gruyère cheese 100 g, finely grated

Equipment

  • 1 Wide heavy 5-to-6-quart pot
  • 1 Wooden spoon
  • 1 Knife and cutting board
  • 4 Broiler-safe soup crocks
  • 1 Rimmed metal baking sheet
  • 1 Box grater
  • 1 Food thermometer

Instructions

  1. Heat the butter and oil in a wide heavy pot over medium heat. Add the sliced onions and stir to coat. Cook uncovered for 45–60 minutes or longer, stirring regularly and more frequently as they brown, until very soft and deep golden brown. Lower the heat if they darken unevenly. Add small splashes of water to release browned deposits as needed; leave any black burned bits behind.
  2. Stir in the garlic for 30 seconds. Add the wine and scrape up the brown deposits. Simmer for 2–3 minutes, then add stock, thyme, bay leaf, Worcestershire and pepper.
  3. Bring to a gentle simmer and cook partly covered for 20–25 minutes. Remove the thyme stems and bay leaf. Taste, then add the measured salt a little at a time only as needed. Add a splash of water if the broth has reduced more than you prefer.
  4. While the soup simmers, heat the oven to 400°F (200°C). Toast the baguette slices on a metal baking sheet for 6–10 minutes, turning once, until dry and lightly golden on both sides.
  5. Set four broiler-safe crocks on the rimmed metal baking sheet and divide the hot soup between them, leaving headroom. Top each with one toast and one-quarter of the grated cheese. Broil about 6 inches from the heat for 1–3 minutes, watching continuously, until the cheese melts and browns in spots. Use only dishes rated by their manufacturer for broiler heat. If unavailable, broil cheese on the toasts separately on the sheet and set them on the hot soup.
  6. Let the bubbling subside briefly, then serve the crocks on heatproof plates, warning that bowls and soup are very hot. Store extra broth without toast in shallow containers, refrigerate within 2 hours and use within 3–4 days. Reheat broth to 165°F (74°C) and bring it to a boil before adding freshly prepared cheese toasts.

Notes

Video credit: Chef Jean-Pierre, Classic French Onion (Onyo) Soup!, published November 27, 2020. The video demonstrates caramelized onions, stock and cheese-topped French bread. His version includes shallots, leeks and a roux, uses sherry and port, and finishes with Swiss and Parmesan; this version keeps the broth clear, uses white wine and Gruyère, and broils the toast on individual bowls. Follow this card for quantities and the bowl-safety alternative. Estimated nutrition: about 450 kcal per one-quarter recipe including one toast and all cheese, based on ingredient weights and typical USDA/manufacturer values. Wine energy is counted in full because alcohol retention varies; actual values depend on brands and reduction. This is not laboratory analysis or a complete nutrient panel. Estimated cost US $8.50 total, about $2.13 per bowl, using US retailer examples and portion allowances. Prices vary; tax, energy and optional sides are excluded.
