Ingredients
Egg bites
- 8 large eggs
- 225 g 4% cottage cheese
- 50 g cheddar grated
- 60 g fresh spinach washed, dried and finely chopped
- 100 g red bell pepper finely diced
- 1/4 tsp black pepper
- 1 tsp olive oil for greasing the pan
Equipment
- 12-cup muffin pan
- Blender
- Food thermometer
- Silicone liners, optional
Instructions
Portion and bake
- Heat the oven to 325°F (165°C). Grease a twelve-cup muffin pan with the measured oil or use greased silicone liners supported in the pan.
- Blend the eggs, cottage cheese and pepper until evenly combined, avoiding a long blend that creates excessive foam.
- Divide the spinach, diced pepper and cheddar among the cups. Pour the egg mixture evenly over them, filling each about three-quarters full. Stir each cup gently if needed to distribute the filling.
- Bake 20–25 minutes until set and a thermometer in a center bite reaches 160°F (71°C). Allow extra time if needed rather than judging only by surface color.
- Rest for 5 minutes, loosen the edges and lift out carefully. Serve two bites per portion. Refrigerate leftovers promptly within 2 hours; reheat saved portions to 165°F (74°C).
