Ingredients
- 240 g cooked chickpeas about 1 drained 15-ounce can; rinse well
- 64 g smooth peanut butter 1/4 cup, stirred until homogeneous
- 40 g maple syrup 2 tablespoons
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1–2 tablespoons water add gradually, only as needed
- 40 g mini chocolate chips about 1/4 cup, ready to eat
Equipment
- Food processor
- Fine-mesh strainer
- Flexible spatula
- Covered refrigerator container
Instructions
- Rinse the fully cooked chickpeas under cool water, drain thoroughly and pat dry. Remove any loose skins that rub off easily; do not use dry or merely soaked chickpeas.
- Add chickpeas, peanut butter, maple syrup, vanilla and salt to a food processor. Process until as smooth as possible, stopping to scrape the sides several times. Add 1 tablespoon water, then additional teaspoons only if needed to move the mixture. Expect a thick dip, not a pouring batter.
- Transfer to a bowl. If processing has made the mixture warm, let it cool briefly before folding in the chocolate chips. Cover and refrigerate 30 minutes to firm.
- Divide into 6 small portions. Serve by the spoon or with optional washed apple wedges. Store covered at 40°F(4°C) or below, use within 3–4 days and refrigerate within 2 hours of serving. This is an edible dip, not a tested baking dough; do not add raw flour or eggs.
