Ingredients

  • 600 g boneless skinless chicken breast about 1 1/3 pounds
  • 80 g plain Greek yogurt about 1/3 cup, unsweetened
  • 1 tablespoon olive oil 14 g
  • 1 tablespoon lemon juice
  • 2 garlic cloves finely grated
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 3/4 teaspoon fine salt
  • 1/4 teaspoon black pepper

Equipment

  • 8 metal skewers
  • Mixing bowl
  • Grill or grill pan
  • Thin-tip food thermometer
  • Tongs

Instructions

  1. Do not rinse raw chicken. Cut into similar 1-inch (2.5 cm) pieces. Mix yogurt, oil, lemon juice, garlic, paprika, oregano, salt and pepper in a bowl. Coat the chicken, cover and refrigerate at 40°F (4°C) or below for 2 hours.
  2. Heat a clean grill to medium-high, about 400–425°F (205–220°C), or preheat a grill pan over medium-high heat. Lightly oil the cooking surface if needed. Thread the chicken evenly onto 8 small metal skewers without packing tightly. Discard the used marinade.
  3. Grill about 10–15 minutes, turning every 3–4 minutes, until golden and the center of several thick pieces reaches 165°F (74°C). Insert the thermometer sideways into the meat without touching the metal. Reduce the heat if the outside browns before the center cooks; time varies with the grill and piece size.
  4. Move to a clean platter with clean tongs and rest 5 minutes. Serve 2 small skewers per person with optional rice, flatbread, cucumber or lemon; sides are excluded from the estimate. Metal skewers remain hot.

Instructional video by Özgül Özen, published February 23,2021, demonstrates yogurt-spiced chicken breast skewers. Her version includes peppers and tomato, tomato paste and additional spices; this recipe grills chicken alone with lemon and oregano, with separate sides. Use the thermometer endpoint here rather than relying on the video’s stated time.
