Ingredients

Apples and cinnamon ribbon
  • 3 cups peeled, cored apples about 360 g, diced into ¼-inch pieces
  • 1/2 cup packed light brown sugar 106 g
  • 2 teaspoons ground cinnamon
  • 1 tablespoon unsalted butter melted
Cake batter
  • 2 1/2 cups all-purpose flour 300 g, spooned and leveled
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter 113 g, softened; plus a little for the pan
  • 3/4 cup granulated sugar 150 g
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup full-fat sour cream 227 g
  • 1/4 cup whole milk 60 ml
Glaze
  • 3/4 cup powdered sugar 85 g
  • 1 1/2 tablespoons whole milk plus a little more only if needed
  • 1/2 teaspoon vanilla extract

Equipment

  • 1 9-by-13-inch metal baking pan
  • 1 Electric hand mixer
  • 2 Mixing bowls
  • 1 Rubber spatula
  • 1 Skewer or toothpick

Instructions

  1. Heat the oven to 350°F (175°C). Grease a 9-by-13-inch metal baking pan. Peel, core and dice the apples into roughly ¼-inch pieces.
  2. Toss the apples with 1 teaspoon of the cinnamon. In a separate small bowl, mix the brown sugar, remaining cinnamon and melted tablespoon of butter to a damp, crumbly mixture.
  3. Whisk the flour, baking powder, baking soda and salt in a bowl. In another bowl, beat the softened butter and granulated sugar until pale and fluffy, about 2 to 3 minutes. Beat in the eggs one at a time, then the vanilla.
  4. Mix the sour cream and milk. On low speed, add the flour mixture to the butter mixture in three additions, alternating with the sour cream mixture. Stop as soon as combined. Fold in the cinnamon apples with a spatula.
  5. Spread half the batter in the pan. Scatter half the brown-sugar mixture over it. Add the remaining batter in small dollops and gently spread, then scatter the remaining brown sugar on top. Run a knife through the batter in a few loose passes; do not blend the layers completely.
  6. Bake for 40 to 50 minutes, beginning checks at 40 minutes. The top should be golden and a skewer in the center should come out with moist crumbs but no wet batter. Check a second spot if the first hits an apple piece.
  7. Cool in the pan for about 20 minutes. Whisk the powdered sugar, milk and vanilla into a thick but pourable glaze. Drizzle over the warm cake, then wait at least 10 minutes for the glaze to settle. Cut into 16 squares.

Notes

Timing is approximate; use the doneness cues. This is a soft baked cake, not a crisp fried fritter. Video credit: Tess Cooks 4u demonstrates a scratch apple fritter cake with a cooked apple filling; this recipe folds uncooked diced apples into the batter and uses a lighter glaze. Follow the written quantities and method here. Estimated nutrition: about 265 kcal per square (1/16 of the cake), including all glaze, calculated from ingredient weights and manufacturer/USDA calorie values; excludes extra pan-greasing butter and optional toppings. This is not a laboratory analysis or a complete nutrient panel. Estimated ingredient cost: US $7 for the cake, about $0.44 per square, using October 2026 US retailer examples for apples, flour and sour cream plus a $4.63 allowance for the other ingredient portions. Prices vary; tax and energy are excluded.
