Ingredients
Oatmeal
- 2 1/4 cups old-fashioned rolled oats 180 g; not steel-cut
- 1 1/2 cups 2% milk 360 mL
- 2 large eggs about 100 g without shells
- 1/4 cup packed light brown sugar 50 g
- 2 tablespoons unsalted butter 28 g, melted and cooled
- 1 teaspoon unsalted butter 5 g, for greasing the dish
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine salt
- 2 cups diced Gala apples 240 g after coring; unpeeled, cut into small 1/2-inch pieces
Equipment
- 1 8-inch square baking dish about 20 cm square
- 2 Mixing bowls
- 1 Whisk
- 1 Spatula
- 1 Food thermometer
Instructions
- Heat the oven to 350°F (175°C). Grease an 8-inch square baking dish with the teaspoon of butter. Wash the apples under running water, core them, and cut into even 1/2-inch pieces.
- Whisk the eggs, milk, brown sugar, melted cooled butter, and vanilla in a large bowl until the eggs are fully blended.
- In another bowl, stir together the oats, cinnamon, baking powder, and salt. Stir into the wet mixture, then fold in the diced apples. Scrape into the prepared dish and spread evenly.
- Bake for 35–45 minutes, checking at 35 minutes. The edges should be lightly browned and the center set without liquid pooling when gently pressed. A food thermometer inserted into the center should read at least 160°F (71°C). Continue baking in short intervals if needed; pan material and ovens vary.
- Let stand for 10 minutes, then divide into six portions. Serve warm as soft squares or spoon into bowls. Add milk or plain yogurt at the table if desired.

Notes
Old-fashioned oats give a distinct oat texture; do not substitute steel-cut oats directly. Contains eggs and milk. Refrigerate in shallow covered containers within 2 hours, or within 1 hour above 90°F (32°C), at 40°F (4°C) or below. Use within 3–4 days and reheat to 165°F (74°C). Nutrition is an estimate per one-sixth of the recipe using 2% milk and including butter for the pan; toppings are excluded. Estimated cost varies by store and location. Instructional video by essy cooks demonstrates an apple-cinnamon oatmeal bake using a vegan variation and a separate apple topping; follow the ingredient quantities and egg-and-milk method written here.
